Classicish Caesar Salad


1 large head of romaine, chopped

2 tbsp chives, minced (optional)

Grated parmesan cheese, a lot

Mambo Italiano Kooshy Croutons

Caesar dressing (below)

1 small garlic clove

1 big ol' pinch of kosher salt

2 large egg yolks

2 tsp fish sauce (or 4 anchovies)

2 tbsp fresh lemon juice

3/4 tsp Dijon mustard

1/2 cup olive oil

3 tbsp grated Parmesan

Black pep, freshly ground obvi


1. Finely chop garlic and mash into a paste. Scrape into medium bowl and whisk in egg, lemon juice, fish sauce, mustard, salt & pep.

2. Slowly stream in olive oil while whisking to emulsify into a nice thick, glossy texture. Mix in parmesan and taste for more salt, pep or lemon.

3. Toss romaine in dressing then mix in a ludicrous amount of croutons, extra parmesan and black pep because YOU EARNED IT!
