INGREDIENTS
Big ol' bunch of arugula
Fennel, thinly sliced
Peas
Sugar snap peas, sliced
Radishes, thinly sliced
Golden beets, raw, thinly sliced
Pickled red onion (optional)
Goat or feta cheese, crumbled
Almost Naked Kooshy Croutons
Lemon Herb Vinaigrette (below)
2 tbsp dill or chives, minced
2 tbsp parsley or cilantro, minced
1/2 tsp honey
1 tsp dijon mustard
1 big pinch of kosher salt
1/4 tsp freshly ground pepper
Juice of 1 lemon, 3 tbsp
1/2 cup olive oil
DIRECTIONS
1. Add all dressing ingredients, except for the olive oil, into a small bowl and whisk to combine.
2. Slowly stream in the olive oil, while whisking to emulsify for a nice thick & creamy texture.
3. Pour dressing over salad and add a copious amount of croutons. Then when you think you're done, just add more croutons : )
