Almost Naked Kooshy Croutons
Scallions, thinly sliced
Jalapeño, thinly sliced
Obviously you can sub in or add any number of ingredients here. The world is your oyster (or crouton)! Think herbs (dill, parsley, cilantro), feta, diced red onion, pesto, cooked chorizo or crumbled bacon.
1. We know you know how to fry up some eggs so we'll keep this short & sweet.
2. Crack a few eggs in a buttered pan and scatter a handful of croutons into eggs as they begin to set.
3. Sprinkle scallions & jalapeño over eggs and let everything cook to your liking.
4. Season to taste with salt and a lil' chili crisp. Who needs toast?!? The croutons should be crispy on the top and slightly softened below. Consider this a new weekend staple.
