A Good Ol' Bowl of Chili

INGREDIENTS

3 tbsp olive oil

2 cups onion, chopped

1/2 cup poblano, chopped

1/2 cup bell pepper, chopped

6 garlic cloves, minced

3 lbs ground beef

1 (6oz) can tomato paste

1/3 cup chili powder

2 tbsp ground cumin

1 tbsp sea salt

1 tbsp brown sugar

1 tsp black pepper

1 tsp thyme (or oregano)

3 (15oz) cans kidney beans

1 (28oz) can crushed tomatoes

2 cups beef broth

1 can/bottle of beer

Poco Picante Kooshy Croutons

Cheddar cheese, shredded

Jalapeño, sliced

Scallions, sliced

Sour cream

DIRECTIONS

1. Heat oil in dutch oven over med-high and add onion, garlic, peppers, garlic and cook until softened, ~5 min.

2. Add meat and cook until no longer pink, 8-10 min.

3. Add tomato paste, chili powder, cumin, S&P, thyme and sugar, cook ~2 min.

4. Raise heat, stir in beans, tomatoes, broth and beer then bring to a boil. Reduce heat to med-low and simmer ~30-40 min, stirring occasionally.

5. Serve with cheese, jalapeño slices, scallions, sour cream and most importantly POCO PICANTE CROUTONS!
